Peel and cut the ripe plantain into ***-4 inches lengths. Rub them nicely with butter. Place them on the grill of a pre-heated oven. About 170 degree Celsius and bake on both sides for 30 minutes. With a knife, slit open the middle then add slices of mozzarella cheese. Sandwich the cheese between the plantain like this. Uhum! Roll the boli up with bacon stripes then secure with a tooth pick like this. Pop back into the oven for 10 minutes or when the cheese starts melting. Serve with stew or pepper sauce.
